I love nothing more than a large glass of nutrient rich juice to start my day. I must admit though that initially I wasn’t completely sold on the health benefits of juice as commercial “vegetable” juices are often ninety percent fruit juice with just a little vegetable juice. However when I started making them at home and realizing just how simple they are I was hooked! I try to ensure that my juices are at least half vegetable and half fruit to ensure that I get a wide spectrum of nutrients without too much sugar. The great thing about juicing is that the permutations and combinations are almost endless. While I love trying new and exotic juices more than often I find myself making this classic combination of juicy apple, sweet carrot and earthy beetroot. This colorful concoction is my go to juice in the morning when I want a really easy way to get my day off to an invigorating start. Juicing really doesn’t get any easier than this the “ABC “of juicing!
Beetroots are a rich source of folate which enables the body to make new protein and DNA and thus maintain healthy new cell growth. They can also reduce your cardiovascular risk by lowering levels of homo-cysteine found in your blood, high levels of homo-cysteine are a associated with an increase likelihood of developing cardiovascular disease. In addition beets are also a wonderful source of potassium. Potassium plays an integral role in the maintenance of the body’s electrolyte balance thus regulating your heartbeat.
- 3 carrots
- 2 apples
- 1 beetroot
- Juice the apples, beetroot and carrots.
- Chill before serving and add a squeeze of lemon before serving if desired.
