I am definitely a little late to the party but I finally took the plunge and bought a Nutribullet. Obsessed doesn’t even come close to describing how I feel towards the newest kitchen gadget in my life! I am literally like a child on Christmas morning. I got through two bags of kale and two and a half bags of spinach along with countless bananas before it was even lunch time. My sister is a fan of all things green but can’t eat apples so it didn’t seem fair to leave her out. Since I am such a considerate younger sister I made this recipe just for her; a delicious kale, pear and almond green smoothie with not an apple in sight. I usually secretly roll my eyes at people who openly declare their love for green smoothies for breakfast but seriously trust me on this one, this smoothie is amazing! The juicy pear sweetens the creamy almond milk while the kale adds vibrancy as well as a whole host of vitamins and minerals. The thick dollop of creamy smooth almond butter is like the icing on top. The best part is that you cannot taste even a hint of kale, I promise! Forget green smoothies for breakfast I could happily drink this all day long…..
Kale’s fame as a super green is well deserved considering its wonderful nutritional profile. If you are looking to improve your complexion (like me!) then kale is the vegetable for you. Kale offers a whole host of skin boosting vitamins and minerals. Firstly kale is a rich source of vitamin C with just one cup providing ninety percent of your daily requirement. Vitamin C helps make collagen which is the structural protein that imparts skin strength by forming a mesh-work that holds together our skin cells. Vitamin C is also an antioxidant which can help prevent damage to our skin by free radicals. In addition kale is a wonderful source of copper. Copper plays a vital role in the production of the pigment melanin which is responsible for protecting our skin from sun damage. Just like vitamin C copper also plays a role in collagen formation.
- 1- 1+ ½ cup unsweetened almond milk
- 5 stalks of kale
- 1 pear
- ½ small banana
- 1 tbsp almond butter
- Cut the kale away from its thick green central stalk.
- Cut the pear in quarters.
- Place the kale, pear, banana, almond milk and almond butter in your blender and blend for 2-3 minutes until smooth and creamy.
