- 2 cans full fat coconut milk
- 1 cup blueberries
- 2 limes
- ⅓ cup maple syrup or honey
- Place the blueberries, coconut milk, maple syrup or honey in a blender and blitz until smooth.
- Zest the limes and add the zest to the blender as well as the lime juice.
- Blend again until smooth.
- Transfer the mixture to an ice cream machine and use according to the manufacturers directions.
