Ginger nut granola {Vegan, Gluten, Dairy, Sugar free}

Serves: Fills 750ml jar
  • 2 cups gluten free oats
  • ¾ cup buckwheat groats
  • 1 + ¼ cup mixed nuts
  • 5 tbsp sunflower seeds
  • 3 tsp ground ginger
  • 1 tbsp coconut oil melted
  • ½ cup maple syrup or honey
  • 2 tbsp coconut sugar (optional)
  1. Place the oats, buckwheat, nuts, almonds, seeds, ginger and coconut sugar if using in a large bowl.
  2. In a small saucepan gently heat the coconut oil and maple syrup until the oil is runny.
  3. Pour the heated oil and maple syrup into the bowl with the dry ingredients and mix well.
  4. Transfer to a baking tray and speared evenly.
  5. Bake for 25-35 minutes stirring frequently.
  6. Remove from the oven and allow to cool.
  7. Serve with coconut yoghurt, almond milk or just straight from the oven.
