Banana, blueberry + cinnamon pancakes

Serves: Serves 2 (makes 6)
  • 1 very ripe banana
  • ½ buckwheat flour
  • ½ cup unsweetened almond milk
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • ½ tsp baking powder
  • 3 tbsp blueberries
  • coconut oil
  1. Peel and mash your ripe banana.
  2. Transfer the mashed banana into a bowl along with the almond milk, maple syrup, cinnamon and baking powder.
  3. Add in the blueberries and gently mix.
  4. Using a non stick frying pan melt some coconut oil.
  5. Measure ¼ cup of your batter out and cook for 2-3 minutes.
  6. Turn your pancake over and cook for another 2-3 minutes.
  7. Transfer to a place and repeat with the remainder of the pancake batter.
  8. Serve with berries and maple syrup.
