Carrot cake granola {Vegan, Gluten, Dairy, Sugar free}

  • 400g gluten free oats
  • 4 large carrots
  • 6 tbsp maple syrup
  • 4 tsp olive oil
  • 2 tbsp chia seeds
  • 4 tbsp pumpkin seeds
  • 3 tsp cinnamon
  • Pinch of nutmeg
  1. Preheat the oven to 160C/ 350F.
  2. Peel and coarsely grate the carrots.
  3. In a large mixing bowl combine the oats, grated carrots, chia and pumpkin seeds.
  4. Add in the cinnamon and a generous pinch of ground or freshly grated nutmeg.
  5. Stir in the maple syrup and olive oil.
  6. Mix well until all the dry ingredients are coated in the syrup and oil.
  7. Taste and add more spices as desired.
  8. Spread the mixture evenly on a lined baking tray and place in the oven to bake for 30 to 35 minutes.
  9. Remove from the oven and stir frequently to ensure that the mixtures a evenly toasted.
  10. Remove from the oven, allow to cool and transfer to a storage jar.
