Coconut, ginger and lime chia pudding

Serves: Serves 1
  • 1 + ½ tbsp whole chia seeds
  • 4 + ½ tbsp coconut yogurt
  • 10 tbsp unsweetened coconut milk
  • 1 tsp sweetener of choice (optional)
  • 1 + ½ tsp freshly grated ginger
  • 1 + ½ tbsp freshly squeezed lime juice
  • ⅓ mango diced
  • Toasted coconut shavings
  • Blueberries
  1. Combine all the ingredients and place in the fridge over night.
  2. In the morning remove the pudding from the fridge and taste.
  3. Add more sweetener if desired and add more milk if the consistency is too thick.
  4. Place some of the diced mango at the bottom of a glass, add the chia pudding and then top with the remaining mango.
  5. Scatter the blueberries and toasted coconut shavings over the pudding and enjoy!
You can also use almond milk or any other type of milk instead of the coconut milk if desired.
