Oil free butternut squash butterbean hummus
Recipe type: Lunch/dinner, snack
Serves: Serves 4
  • 1 cup roasted butternut squash
  • 1 cup cooked butter beans
  • 2 cloves garlic peeled
  • ¾ tsp cumin seeds
  • juice of ½ lemon
  • 3 tbsp tahini paste
  1. If you don't already have a roasted squash just halve your squash and roast in a preheated oven at 180 C/ 350 F for 30-40 minutes by which time your squash should be crispy in top and tender inside.
  2. Remove from the oven and allow to cool.
  3. Combine all the ingredients and blend until smooth.
  4. Serve with some crudités and enjoy!
