Mango, coconut + mint popsicles
Recipe type: Juices/ Smoothies, Snacks
Serves: Makes 4 ice lollies or 1 generous smoothie
  • 1 large ripe mango roughly chopped
  • ¾ cup coconut milk
  • 1 tbsp mint leaves
  • squeeze of lime juice
  1. If using frozen mango chunks remove them from the freezer and allow them to soften slightly for about 5-10 minutes.
  2. Place the mango, coconut milk and mint in a blender and blitz until smooth.
  3. Pour into a glass and enjoy!
  4. If making popsicles pour the mixture into your pop molds and place in the freezer for about 3 hours.
  5. To remove the pops from their molds simply fills a bowl with warm water.
  6. Hold each pop mold in the water for about 20-30 seconds.
  7. They should now relatively easily come out of their molds.
  8. Enjoy!
You can use either full fat or reduced fat coconut milk depending on your preference.
