I always make up a big batch which I store in the fridge ready to add flavor to any meal.I could eat this with just about anything, I love to smear it over oatcakes, drizzle it over a simple salad to liven it up, dollop it on my cauliflower pizza or if i am being really virtuous tossed with fresh courgetti and sun-dried tomatoes.

- 5 stalks kale
- 1-2 tsp garlic minced
- 1 large bunch of basil
- ½ lemon juiced
- ½ ripe avocado
- 1 tbsp olive oil
- Salt + pepper
- In a blender or food processor combine the kale, avocado, basil, lemon juice, avocado and olive oil.
- Blitz until you have a smooth and creamy paste.
- Add a little more olive oil if you would like a smoother texture.
- Season with salt and pepper.
- Serve tossed with courgetti.
