My sister is currently studying for exams and being the fab sister that I am I decided to make her bliss balls to cheer her up (and maybe earn some brownie points along the way……) Being as indecisive as I am I couldn’t choose one flavour to make so a few hours later I ended up with seven different types of bliss balls (I might have gotten a little carried away!)Of all the various combinations and variations this simple combination was definitely the firm favorite. I love the summery combination of zingy lemon, sweet coconut and creamy cashew nuts! These make for the perfect snack and these little bites are packed full of flavour and energy. Now that the days are so hot I find that I’m not as interested in having large meals so instead I tend to spend the whole day grazing on smoothies, fruit and these blissful bites. Needless to say these didn’t last for long!
Coconuts are currently very much in Vogue; coconut water, coconut milk, coconut yogurt and of course coconut oil are all beginning to appear in almost every shop. Coconuts relatively new found fame is as a result of its very impressive nutritional profile. Coconuts and its derivative such as coconut oil contain a medium fatty chain acid called Lauric acid. Lauric acid is converted in the body into a compound that has both antiviral and antibacterial properties which serve to improve the functioning and efficient of our immune system.
- ¼ cup cashew nuts
- 2 tbsp desiccated coconut
- ¼ cup sultanas
- 2 tsp lemon juice
- ½ tsp lemon zest
- Pinch turmeric
- Place all the ingredients in a food processor or blender and pulse until you have a doughy mixture.
- Taste and add more lemon zest if desired.
- Transfer the mixture to a bowl and roll into 6 balls.
- Roll the bliss balls in desiccated coconut and lemon zest to decorate.
- Enjoy!
