Peanut butter is my in my opinion one of life’s best inventions. Bad day, good day, long day…..whatever the question peanut butter is almost always the answer. Pretty much nothing can surpass the glory of a large spoonful of lusciously creamy and thick peanut butter devoured straight from the jar of course well that was until I started making these ridiculously delicious chocolate peanut butter cookies! These cookies have the most wonderfully dark, nutty and crumbly biscuit base topped with chunks of smooth dark chocolate, a generous drizzle of peanut butter (you can’t possible have too much peanut butter!) all topped off with a sprinkle of crunchy peanuts.
While peanut butter and cacao makes these glorious cookies oh so decadent Natvia sweetener makes these oh so virtuous. Natvia is a 100% natural blend of stevia and erythritol. Honestly I have tried baking with other brands of stevia before but its overpoweringly bitter aftertaste has meant it is now gathering dust languishing at the back of my cupboard. These glorious cookies are perfectly sweetened chocolate and peanut bites of heaven without any bitter after taste!
- 6 tbsp peanut butter
- 2 tbsp oat flour or buckwheat flour
- 3 tbsp cacao powder
- ½ tsp baking powder
- 1 tbsp maple syrup
- 1 tbsp Natvia
- 2 tbsp coconut oil melted or olive oil
- 1 tbsp almond milk (if needed)
- Peanut drizzle:
- 2 tbsp peanut butter
- Natvia
- Almond milk
- Preheat the oven to 170C/ 350F.
- In a large bowl combine all the ingredients and mix well.
- If the mixture is too dry to come together into a "dough" slowly add in the almond milk.
- Divide your mixture into your desired cookie size.
- Roll each cookie into a ball and flatten with the back of a spoon.
- Bake in the oven for 10-12 minutes.
- Remove from the oven and allow to cool.
- Meanwhile make the peanut butter drizzle by mixing together the peanut butter and desired amount of sweetener..
- Slowly add in the almond milk until you have a pourable consistency.
- Drizzle the cooled cookies with the peanut butter and decorate with chopped peanuts.
- Enjoy!
These cookies are best enjoyed once cooled!
