Mint is one of my flavours from ice cream to chocolate and everything in between. Whatever the weather mint never fails to remind me of warm sunny summer days. With only one mint recipe on the blog I decided it was time to share this simple mint and coconut bliss ball recipe. Bliss balls are such a gorgeous thing to make as they require just a few ingredients and very little time not to mention that they make for lovely little gifts. This coconut and mint variation might just be my favourite variation yet. I adore the summery combination of fresh mint and tropical coconut all enrobed in a smooth layer of lusciously creamy dark chocolate. In this recipe I advise tasting as you add in the peppermint extract drop by drop as one minute you have a faint mint flavor, add one drop too many and before long they will be firmly in toothpaste territory! The wonderfully vibrant green hue is thanks to VITL’s nutritionally supercharged green powder. This super powder packs 16 nutrient dense superfoods into handy little sachets. My favourite thing about this powder is that it combines nutritional powerhouses such as spirulina and maca without any sort of “healthy taste” in fact it has the most gorgeous sweet vanilla taste which makes it perfect for this sweet recipe. Life is all about balance right? Well it doesn’t get more balanced than these nutrionally supercharged nuggets of pure summery heaven :).
Coconut oil, coconut sugar, coconut milk, coconut water…..Coconut in every shape and form seems to be the health food du jour. coconut and it’s oil contain the medium fatty chain acid lauric acid which has been shown to possess antibacterial and antiviral properties which can thereby help strengthen the immune system. Even though coconut and coconut oil have high levels of saturated fat conversely they have been shown to have a beneficial effect on total cholesterol levels as well as levels of LDL or “bad” cholesterol which improves cardiovascular health.
- ¾ cup dessicated coconut
- 2 tbsp coconut oil melted
- 3 tbsp maple
- 1 sachet VITL Greens
- Few drops mint extract to taste
- Dark chocolate to coat
- Place all the ingredients in a blender or food processor except the mint extract.
- Blend until you have a doughy mixture.
- Add in the mint extract drop by drop tasting as you go and blending between each drop.
- Remove from the blender and place in a bowl.
- Roll the mixture into little balls.
- Drizzle or dip in dark chocolate if using.
- Place in the fridge for 10 minutes to allow the blis balls to firm up.
- Enjoy!
