Every year when my sister and I were younger we would go to our local market on the Saturday before Christmas. The only thing that could get us out of bed that early on such a cold morning was the thought of pipping hot sweet waffles.There was a woman who sold the most amazing fresh waffles. There would always be such a long queue but believe me these were so worth the wait. They were amazingly crispy on the outside and beautifully soft on the inside. The best part was the tower of whipped cream, lashings of melting Nutella and snowy dusting of icing sugar that adorned these sweet delights. Before long we would be as quiet as mice devouring our waffles while managing to get cream and chocolate every where possible. Sadly the waffle lady eventually left the market but my love for waffles is still very much present! When DOMU sent me their new VonShef waffle maker to try I couldn’t wait to remake this childhood favorite. These cacao and vanilla waffles are so simple to make and taste wonderfully decadent. If you don’t have a waffle maker these would make delectable pancakes. Cacao is a superfood not solely for its mood lifting powers but also for its nutritional profile. Cacao is rich in the antioxidant flavonoid which is also found in grapes. These flavonoids may prevent anything from Alzheimer’s Disease to cancer though the research is not conclusive yet. In addition cacao has been shown to reduce blood pressure as well as possibly increase longevity. As wonderful as cacao is it does contain caffeine so unless you want to experience sleeplessness and anxiety it is probably best to not eat the whole batch!
- ¾ cup gluten free oat flour
- 3 tbsp cacao powder
- 4 tbsp maple syrup or honey
- ¾ cup + 3 tbsp unsweetened almond milk
- 2 tbsp oil of your choice
- 1 + ½ tsp baking powder
- 1 tsp vanilla
- Pinch salt
- Combine all the ingredients in a bowl and mix well.
- Cook the waffle batter according to your waffle machine's instructions.
- Top with coconut yogurt, fresh berries and chopped hazelnuts.
- Enjoy!
