Instructions

Start by preparing your base, so steam the sweet potato until it becomes soft, then allow it to cool to room temperature, then place this into a food processor or blender with your cocoa powder, instant coffee, rice malt syrup, and vanilla extract.

During the blending process, add your coconut milk and add more if you feel the consistency isn’t quite right.

You can also add more cocoa powder and instant coffee if you want a fuller flavor or if you find the taste isn’t as pronounced as you’d like.

Once you’re happy with this, you can pour the mixture into a container and leave it in the fridge to cool, preferably for around 2 hours.
