Ingredients
Before we move on to the recipe, let’s first go through the ingredients that will be needed to make this decadent sweet treat.
- Dairy-Free Chocolate: Any kind of vegan chocolate is suitable here, be it chocolate chips, a chocolate bar, milk chocolate, or dark chocolate. You can even go about making your own vegan chocolate if you want to.
- Vanilla Extract: This will offer a sweet, vanilla flavor. For the best results, use a natural and pure vanilla extract.
- Sweetener: As well as that vanilla, you might need something for a bit of extra sweetness too. This can be powdered sugar, but for recipe purposes, we are going to be using powdered Erythritol, also known as Xylitol. This is a sweet substance that is extracted from certain algae and lichens and is often used in low-calorie food recipes.
- Coconut Yogurt: You can also use liquid sweetener here, but coconut yogurt offers a melt-in-the-mouth consistency that is hard to beat. Some other alternatives here would be cashew yogurt, full-fat coconut milk, or coconut cream.
- Coconut Oil: This ingredient helps the chocolate coating get the right consistency.
- Salt: A pinch of salt will enhance the flavor of your almond Bounty bars.
- Shredded Coconut: You can use either sweetened or unsweetened coconut for your Bounty bars, as well as desiccated coconut. It all depends on what you want, kind of sugar levels you want.
- Almonds: As many or as few as you so choose, depending on just how nutty and crunchy you want the final bars to be.
Recipe
The recipe for creating homemade, vegan Bounty bars is pretty simple and requires less than ten steps to complete.
All you will need is a food processor, so let’s get started!
- Combine the salt with the sweetener (Erythritol in our case) and shredded coconut using your food processor.
- Blend the three ingredients up for a few seconds, until everything has combined well.
- Once they have blended, add in your coconut yogurt (or whichever liquid sweetener you chose) along with the vanilla extract (Check out this Mango Coconut Lassi Recipe Here).
- Blend up the ingredients again. You might find that you need to scrape down the sides in order to get as much of the mixture as possible into the bowl.
- You will know that the mixture is ready when it reaches a dough-like consistency. You might find that the mixture is either too dry or too wet. If it’s too dry, try adding in a little more of your liquid sweetener, such as yogurt. If it is too wet, add in some more shredded coconut.
- When you are certain that you have achieved the right consistency with your dough, grab yourself a tablespoon and start heaping up the mixture with it.
- Take the scooped-up mixture and start forming it into bars. Try and get them as similar to the Bounty bar shape as you can if you want to make an exact Bounty bar replica. If you aren’t fussed about the shape, you could make any shape you want, such as Bounty bar balls!
- Keep scooping and molding until you have used up all of the mixture.
- Take your almonds and gently press them into your coconut mixture, using as many or as little as you choose.
- Transfer your bars onto a baking tray lined with parchment paper or a plain plate.
- Let the bars freeze until they are firm, which will take around thirty to forty-five minutes.
- Once completely firm, it’s time to prepare the chocolate coating! You can do so by melting the coconut oil and dairy-free chocolate either in a microwave or in a double boiler. If you opt for the microwave, make sure that you use a microwavable bowl and that you take the mixture out and stir it every ten to fifteen seconds.
- To ensure that the almonds on the bar don’t become dislodged, you will need to pour the melted chocolate over the coconut and almond bars rather than dip them in. Make sure that you do this over a sink or a well covered surface, otherwise you are sure to make a melted chocolate mess in your kitchen!
- Once you have poured as much chocolate as you so desire over the Bounty bars, freeze them again until they are solid. If you need to, you can always freeze them for fifteen minutes, then pour more chocolate on them before freezing them again.
